Participants Needed: Clinical Trial Examining the Effects of a Mediterranean Dietary Pattern with White Potato on Cardiometabolic Health in Adults with Pre-Diabetes

Are you pre-diabetic (aged 45-80 years) and a non-frequent potato consumer (<2 servings of baked potato with the skin a week) interested in examining measurements of your glucose control, cardiovascular health, and dietary quality?

Join our research study at the Department of Kinesiology & Nutrition Sciences, where we're investigating the impact of nutrition education (focusing on Mediterranean diet adherence) and baked potato with the skin or nutrition education alone on cardiometabolic health and dietary quality among pre-diabetics from different demographic backgrounds. Our study aims to evaluate the effects of daily consumption of potato with nutritional education compared to nutrition education alone on various aspects of cardiometabolic health among individuals with pre-diabetes from different demographic backgrounds, with the goal of providing evidence for their inclusion in a balanced diet. The effects on cardiometabolic health outcomes includes assessments of: body composition, vascular measurements, blood glucose (continuous glucose monitoring), lipid profiles, glycemic control, inflammation/oxidative stress, and blood pressure measurements. In total you will be asked to come to the study site for 8 visits for a total of 7-8.5 hours if randomized to the baked potato with nutrition education group and a total of 6 visits for 6-7.5 hours if randomized to the nutrition education group. You will all  spend 1.5-2.5 hours total completing three-day food records and 2 hours total for nutrition education throughout the 12-week study period.

​Regardless of the group you are randomized to, you will receive Mediterranean Diet nutrition education, tools, and resources for adherence. Depending on which group you will be randomly selected to participate in, you may be given daily supplementation of pre-prepared baked potato with the skin will be in microwave/oven-safe containers, that can be stored in your freezer. By participating in this 12-week study, you'll have the opportunity to learn about healthy eating habits, have measurements of cardiometabolic risk assessed, and contribute to research assessing nutrition education, a whole food, and dietary quality among pre-diabetic individuals.
