Lung-Wen Antony Chen (Environmental and Global Health) and colleagues published an article on "Quantitative microbial exposure assessment of uropathogenic Escherichia coli in ready-to-eat chicken: Consumer risk and mitigation strategies in Taiwan" in the journal Food Research International.
Ready-to-eat (RTE) meats, often consumed without reheating, are vulnerable to contamination such as uropathogenic E. coli (UPEC) during the retail stage. In this study the team quantitatively assess consumer exposure to UPEC from RTE chicken while identifying variables with the greatest impact on exposure risk. The findings emphasize the need for targeted interventions to mitigate UPEC contamination.
