Joshua Khorsandi, Liahm Blank, Spencer Thatcher, Abu-Bakr Ahmed, Kavita Batra, G. DeAndrea, and Aftab Merchant (Medicine) have published a study titled, “Hidden danger in everyday cooking: microplastic release from plastic cutting boards and impact on health and the environment,” in Toxicology and Environmental Health Sciences. Their research identifies plastic cutting boards as a direct and modifiable source of dietary and environmental microplastics introduced during routine food preparation. The study highlights the importance of incorporating cutting board-related microplastic shedding into exposure assessments and calls for standardized methodologies, improved nanoplastics quantification, and clearer product and food-contact guidelines. These findings bring attention to an overlooked risk pathway, mechanical shedding from food-contact plastics and emphasize the need for stronger regulatory consideration to reduce avoidable exposure and better inform public health and environmental risk management.
