Doctoral student Esther U. Adaji (Integrated Health Sciences) co-authored a study titled “Evaluation of Share Tables in U.S. Elementary School Lunchrooms, from Waste to Rescue,” published in the International Journal of Environmental Research and Public Health on September 15, 2026. The study evaluated share tables in 11 Title I elementary schools and found that share tables were widely used as a low-cost strategy to redistribute unopened school food and reduce food waste. Observations at three schools showed an average share table utilization rate of 79.6 percent. The findings highlight the importance of staff engagement, student education, promotion, and structural support for sustaining share table programs in school cafeterias.
