Jean Hertzman, Ph.D., CHE
Biography
Jean Hertzman is an associate professor and assistant dean of operations for the William F. Harrah College of Hotel Administration at UNLV. As assistant dean, she oversees the operations of the food and beverage laboratory facilities in Frank & Estella Beam Hall, the Hotel College Catering Operations in the Stan Fulton Building, and special events including UNLVino and the Chef Artist Dinner Series. She also coordinates food and beverage class scheduling, student advising, and assessment. Dr. Hertzman teaches Foodservice Operations Fundamentals, Culture and Cuisine, UNLVino Management, Hospitality Service Management, and a graduate seminar on Hospitality Management Education. Her research interests are hospitality and culinary education, foodservice operations, food safety, and career planning and training for the hospitality industry. Dr. Hertzman obtained her Ph.D. in Educational Leadership from UNLV in May 2006. She also holds a Bachelor of Science degree in Hotel Administration from Cornell University and a Master of Business Administration degree from the A.B. Freeman School of Business at Tulane University, New Orleans. She has been certified as a Culinary Educator by the ACF since 1996. Previously, she was a Chef Instructor at The National Center for Hospitality Studies at Sullivan University in Louisville, KY. She has work experience in independent restaurants, hotels, and private catering services. Dr. Hertzman’s honors include induction into the ACF Chefs of Las Vegas Hall of Fame in 2010, the Sam and Mary Boyd Award for Distinguished Teaching in 2005 and for Service in 2002, 1998 Chef of the Year for the ACF Chefs Las Vegas, and two I-CHRIE best paper awards.
