Rebel Reset: Culinary Medicine

Health Meets Food/Culinary Medicine ( is a curriculum used by the Kirk Kerkorian School of Medicine at UNLV (KSOM) with our students. It was developed in partnership with George Washington University to “change the dialogue between healthcare professionals and their patients about food and health.” Dr. Annie Weisman and Kathi Pauli from the KSOM are excited to share the community curriculum of Health Meets Food with the UNLV community.

Here is the important information you need to know:

  1. This class is best experienced if you are at home cooking alongside the rest of the group. Therefore, you will need to be at home, in your kitchen, during the entire two hours of class.
  2. About a week prior to the class Kathi Pauli will email you the Zoom link, recipe lists, community course login information, and additional information for the class.
  3. As a class participant, please ensure that you have all the necessary food items and kitchen supplies in order to create your recipes. You are always welcome to make any necessary changes to your recipes to accommodate any special diet needs. Kitchen supplies are typically basic supplies found in most kitchens.
  4. During class time we will spend time discussing nutrition, health benefits of the selected recipes, nutritional values of the recipes and so much more!

Kathryn Pauli started her position as the manager of wellness and integrative medicine with the Kirk Kerkorian School of Medicine at UNLV in July of 2021. Prior to joining UNLV, she worked for the Clark County School District in Title 1, high-need schools for 13 years, spending a critical part of her time addressing the trauma and mental health concerns many students face.

During her time at the Brown Academy of International Studies, where she served as a math teacher, learning strategist and then as an assistant principal, Pauli worked closely with students in creating restorative justice plans to avoid out-of-school discipline. In addition, she engaged with the school’s leadership team, implementing multi-tiered systems of support (MTSS) that were focused on addressing the trauma, mental health, behavioral, absenteeism, and academic challenges that many students faced.

Pauli, who earned a master’s degree of education in curriculum and instruction from UNLV and holds a master’s degree in administrative leadership from Sierra Nevada College, also taught 5th grade at Halle Hewetson Elementary School in Las Vegas.

Originally from Minnesota, where much of her family still resides, Pauli enjoys spending time with her immediate family, which includes two puppies, Addy and Olive. Married with two daughters, Haleigh and Magen, Pauli loves to travel, exercise, and follow the Golden Nights.
